HOW TO USE SEAL AND BANDS
ALL METHODS
Top and edges of jars should be smooth with no cracks.Check New Seals for any imperfections.
OVERFLOW METHOD
1. Wash jars in hot soapy water. Rinse jars, bands, and seals and place jars and bands in heated oven Place seals in very hot water to soften compound prior to use. Fill the jar with hot fruit and pour over boiling liquid. Run table knife around inside of jar to release air bubbles. Wipe rim of jar. Place seal on the jar making sure it is centralized. The rubber compound on the undeneath of the seal must make contact with the lip of the jar all the way round. Screw down the band tightly; wipe down the jars, turn jar up side down on bench away from any window drafts. Leave to cool.
2. Check the domed centre of the lid is down and stays down when pressed, indicating the jar is sealed. This usually takes around 3 hours. Let jar cool for at least 12 hours before removing band  clean and store in a cool place.
WATER BATH PRESERVER METHOD
3. If using the Water Bath Preserver method pack the fruit, the bands and seals must be in good condition, leaving a 10-15mm head space, then place the seal on and centralise. Only screw down the  bands very lightly, (DO NOT TO SCREW DOWN THE BAND TOO TIGHTLY) this assists in limiting the buckling effect caused by pressure being unable to escape while product is cooking in the jars. When   processing is finished remove the jars from the preserver and tighten down the screw bands fully to  complete the sealing process.
FAILURES
4. Most failures are caused by the band not being screwed down tightly enough (in the case of  the overflow method) or the seals have not been centralised on the jars, or by under processing.
